Harvest Apple Salad

Maple Mustard Vinaigrette

½ cup olive oil

¼ cup apple cider vinegar

2 tablespoons Dijon mustard

2 tablespoons maple syrup

½ teaspoon garlic powder

¼ teaspoon each salt and pepper

Mix in a jar and shake to combine. Taste and adjust salt and pepper.

Salad Fixin’s

1 large container spring mix salad (or greens of choice)

2 apples, cut into matchsticks * I like Fuji or Honeycrisp 

1 cup candied walnuts

1 cup cooked and cooled quinoa

¼ red onion, peeled and thinly sliced

2 cups broccoli slaw

Feta cheese

Dried cranberries

Optional

Add shredded chicken to make this an entree salad. The easiest way is to buy a roasted chicken and add as much white meat as needed for the number of people you’re serving.


*To cut into matchsticks, cut the apple into halves. Lay a half on its flat side to slice the apple into thin planks. Stack 3-4 of these planks on their sides, and slice them again to create matchsticks.
